Classic Sugar Cookies
Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
Instructions:
In a medium bowl, whisk together flour, baking soda, and baking powder. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla. Gradually add the dry ingredients and mix until well combined. Chill the dough for at least 1 hour. Roll out the dough, cut into shapes, and bake at 375°F (190°C) for 8-10 minutes.
Chocolate Chip Cookies
Ingredients:
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
Instructions:
Preheat oven to 375°F (190°C). In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth. Beat in eggs one at a time, then stir in vanilla. In a separate bowl, combine flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, then fold in the chocolate chips. Drop rounded tablespoons of dough onto ungreased baking sheets and bake for 9-11 minutes.
Peppermint Bark Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon peppermint extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
Crushed candy canes for topping
Instructions:
Preheat oven to 350°F (175°C). In a large bowl, cream together butter and sugar. Beat in the egg and peppermint extract. In a separate bowl, whisk together flour and salt. Gradually add the dry ingredients to the wet ingredients. Roll the dough into balls, place on a baking sheet, and flatten slightly. Bake for 10-12 minutes. Once cooled, melt white chocolate and drizzle over the cookies. Sprinkle crushed candy canes on top.
Gingerbread Cookies
Ingredients:
3 cups all-purpose flour
3/4 cup dark brown sugar, packed
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup molasses
1 large egg
Instructions:
In a large bowl, whisk together flour, brown sugar, ginger, cinnamon, cloves, baking soda, and salt. In another bowl, beat together butter, molasses, and egg. Gradually add the dry ingredients to the wet ingredients. Divide the dough, wrap in plastic, and chill for at least 1 hour. Roll out the dough, cut into shapes, and bake at 350°F (175°C) for 8-10 minutes.
Snickerdoodle Cookies
Ingredients:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons granulated sugar
1 tablespoon ground cinnamon
Instructions:
Preheat oven to 350°F (175°C). In a large bowl, cream together butter and sugar. Beat in eggs. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients. In a small bowl, combine sugar and cinnamon. Shape the dough into balls, roll in the cinnamon sugar mixture, and place on a baking sheet. Bake for 10-12 minutes.
Raspberry Linzer Cookies
Ingredients:
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 cup ground almonds
1/2 cup raspberry jam
Powdered sugar for dusting
Instructions:
In a large bowl, cream together butter and sugar. In a separate bowl, whisk together flour, baking powder, and ground almonds. Gradually add the dry ingredients to the wet ingredients. Divide the dough, wrap in plastic, and chill for at least 1 hour. Roll out the dough, cut into rounds, and use a smaller cutter to create a window in half of the rounds. Bake at 350°F (175°C) for 10-12 minutes. Spread jam on the full rounds and top with the windowed rounds. Dust with powdered sugar.
White Chocolate Cranberry Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
1 cup dried cranberries
Instructions:
Preheat oven to 350°F (175°C). In a large bowl, cream together butter and sugar. Beat in eggs and vanilla. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients. Fold in white chocolate chips and dried cranberries. Drop rounded tablespoons of dough onto baking sheets and bake for 10-12 minutes.
